Almond Butter Bars

1 cup almond butter (or other nut/seed butters)
1/4 cup coconut flour
1/4 cup maple syrup
1 tsp vanilla (optional)
1 tsp cinnamon (optional)
1 cup chocolate (I used Hu Kitchen salty dark chocolate gems)

 

Combine almond butter, coconut flour, maple syrup, vanilla, + cinnamon in large mixing bowl and mix well. Separately, melt your chocolate in the microwave (because this was the lazy way I chose to do it which took ~ 1 minute 20 seconds). Line a small baking tin with parchment paper and add almond butter/flour mixture and pat down with hands or spatula until the layer is even. Then, pour melted chocolate over top, making sure to cover the top entirely. Refrigerate for 3 hours and then cut in to bars.
