"Cream" of Broccoli Soup

1 medium size stalk of broccoli
2 cloves garlic
1 tablespoon olive oil
2.5 cups of veg broth
Handful parsley
Water, if needed
Sea salt and pepper to taste

Preheat oven to 400 and line baking sheet with parchment paper. Cut broccoli in to bite size pieces and place on baking sheet with garlic. Evenly cover in olive oil and sea salt. Roast for ~15 mins or until slightly browned (do not burn!)

Move broccoli to pot or dutch oven and add remaining ingredients. Allow to come to rolling boil and if broth reduces, add some water to make sure broccoli is covered. Once boiling, cover with lid and let sit for 15-20 mins. Remove from heat and allow to cool. Place in blender and blend to desired texture (I like mine a little chunkier)

Garnish with some extra parsley and add red pepper flakes, if you’d like! I ate a bowl of this soup with my Greek Lemon Potatoes (linked here!
