Guacamole Salad

 

Salad base:

3 cups romaine

1/2 cup grape tomato, halved

1/2 cup cucumber, diced

1/4 cup shaved fennel

1 cup beets, steamed & diced

2 tablespoons cilantro

2 tablespoons chives, chopped

Guacamole:

1 avocado mashed

2 teaspoons garlic powder

2 tablespoons red onion, diced

Sea salt to taste

 

Add in: 2 tablespoons Coconut Aminos

 

Mix salad base together in bowl. Separately, mash avocado and mix in garlic powder, sea salt, and diced red onion. Top salad with coconut aminos, sea salt to taste, and guacamole. Mix well and enjoy!
