Instant Pot Mexican Tomato Rice

2 tablespoons avocado oil
¼ cup diced onion
1 ½ cup rinsed basmati rice
2 cloves minced garlic
2 tablespoons tomato paste
1 teaspoon paprika
1 teaspoon sea salt
1 ¾ cup vegetable broth
1/3 cup crushed tomato
Juice 1 whole lime
Cilantro

 

Turn Instant Pot to ‘Sautee’ mode. Once hot, add avocado oil and onions and stir quickly to ensure onions do not burn.

 

Once onions are translucent, add rice and lightly toast for about 2 minutes, stirring frequently to prevent rice from sticking to bottom of pot. Add tomato paste, paprika, and vegetable broth and mix well until tomato paste has dissolved.

 

Place lid back on Instant Pot and turn to ‘Pressure Cook’ mode on high. Set time to 4 minutes and let rice cook. Once done, allow seal to naturally release and then remove lid. Add crushed tomato, lime juice, cilantro, sea salt, and mix.
