Roasted Sweet Potato Caprese

1 medium/large sweet potato
1 large tomato
1 cup vegan mozzarella (I love Violife brand)
3/4 cup basil 
Sea salt

 

Preheat oven at 400F.

Roast potato for 30-40 minutes depending on how large potato is.

In the meantime, cut tomato in to slices and your vegan mozzarella (if not using shredded). 

Once potato is soft (not mushy!), place on cutting board and allow to cool for about 10-15 mins. 

Cut potato gently lengthwise in to 3 slices as to not break the skin (skin will slightly break so it's important to be careful). Then, layer your potato with tomato slices, cheese, basil, and a bit of sea salt as shown in picture above. 

Place potato back in oven for 5-7 mins or until cheese is melted.
