Za’atar Smashed Potatoes

1 bag of round, smaller potatoes (pee-wee, butterball for ex.)
¼ cup avocado oil
3 tablespoons za’atar
Sea salt

 

Preheat oven to 400 degrees and line cookie sheet with parchment paper.

 

Cut potatoes in half and allow to sit in ice bath (bowl of cold water with ice) for 20 minutes to reduce starchiness (this will result in crispier potatoes). While potatoes are in ice bath, boil a pot of water.

 

Remove potatoes from ice bath and move to boiling pot of water. Once potatoes are fork tender, strain and place on cookie sheet. Using a fork, back of spoon, bottom of jar/cup, press gently down on each potato half to ‘smash’ (about halfway down, not all the way). Sprinkle avocado oil and za’atar over potatoes and mix until each potato is coated.

 

Place in oven and roast for about 20 minutes or until crispy, flipping them over halfway through.
